POTS AND PANS

Every good pot and all good pans share a few common traits!

In a well-stocked kitchen, there will be lots of first-rate pots and pans. They may look different, but all high-quality pots and pans share three essential qualities.

1. Look for heavy-gauge materials. Heavy-gauge pots and pans deliver heat more evenly. Pots or pans that are heavy enough give a dull thud when hit with knuckles.

2. Find handles (for the pots, the pans AND the lid) that are sturdy, heatproof, and secure. Handles come welded, riveted, or screwed. Many pots and pans have metal handles that stay cool when on the stove because the metal is a poor heat conductor and retainer, such as stainless steel. Heat-proof or oven-proof handles mean the pots and pans started on the stovetop can be finished in the oven.

3. All lids should fit tightly on the pots and pans to keep in moisture.
