Foods I Grew Up On!

Growing up as the youngest in my family,
I had a pretty good grip on Mom's ear about what my favorite foods were.
Below are some she still cooks when I am home!
 



CAROL'S CHOCOLATE CAKE
(This is everyone's favorite for their birthday!)

In large mixing bowl mix two cups sugar and two cups flour.

In small pan bring 1 cup water, ½ cup oil, 1 stick margarine, 4 tablespoons cocoa to a boil.

Add to flour/sugar mixture.

Add ½ cup buttermilk, one teaspoon soda, two eggs, one teaspoon vanilla.

Cook approximately 45 minutes in preheated oven at 350 degrees.

Icing:

In medium saucepan, bring to a boil 1 stick margarine, 4 tablespoons cocoa, 6 tablespoons milk. Add in several increments one box powdered sugar. Add one teaspoon vanilla and one cup chopped pecans.

(I always request no nuts in the icing, being the "baby" in the family, I usually get my way! Often times, on someone else's special occasion I still get half without!)

 



MARCY'S LASAGNA

Brown in large skillet 1½ - 2 lb. ground beef, drain

Add: 1 can mushrooms, ½ cup chopped onion, ½ tsp. garlic powder, 1 tsp. oregano, 1 tsp. salt, 1 tsp. pepper, and three 8 oz. cans Hunts tomato sauce. Cook sauce in fry pan for about 40 minutes.

In a mixing bowl, mix 1 cup sm. Curd cottage cheese, 2 cups shredded mozzarella cheese, ¾ cup parmesan cheese.

Cook 9 Lasagna noodles. Butter pan. Place 3 noodles in bottom of pan, 1/3 of meat sauce on the noodles, 1/3 cheese mixture on the sauce. Repeat two more times.

Cover with foil. Bake at 350 degrees for 45 – 60 minutes.

Let cool for a few minutes. Cut and serve.

 



PARTY POTATOES

2 lb bag hash brown potatoes
1 pt sour cream
2 cans cream of mushroom soup
1 can cream of potato soup
2 cups sharp cheddar cheese
Salt & pepper to taste

Mix & put in casserole dish. Bake 40 minutes @ 350 degrees.

Optional: Put some shredded cheese on top of casserole

(Mom, I didn't know cheese was optional? Isn't it required?)

 



FRESH APPLE CAKE

2 cups sugar, 3 eggs, 2 cups self rising flour, 1 cup oil, 2 cups finely chopped apples, 1 teaspoon vanilla, 1 cup chopped nuts.

Mix all ingredients (except apples & nuts) together. Add apples & nuts. Bake @ 350 degrees for 30 minutes.

(Same story as before about the nuts!)
